Ingredients

Broth

  • 8 cups low-sodium beef or vegetable broth
  • 2 cups water
  • 1 large onion, thinly sliced
  • 4 garlic cloves, minced
  • 2-inch piece fresh ginger, thinly sliced
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp rice vinegar
  • 1 to 2 tbsp red chilli paste
  • 1 tbsp fish sauce (Optional)
  • 1 tbsp brown sugar (Optional)
  • Salt and pepper to taste

Soup

  • 12 oz boneless beef sirloin
  • 8 oz rice noodles
  • 1 cup sliced mushrooms
  • 1 cup baby bok choy, chopped
  • 1 red capsicum, thinly sliced
  • 2 green onions, chopped
  • Fresh coriander leaves for garnish (Optional)
  • Lime wedges for serving (Optional)

Instructions

Prepare the Broth

1. In a large pot, combine 8 cups of low-sodium beef or vegetable broth and 2 cups of water.

2. Add thinly sliced onion, minced garlic, and thinly sliced ginger to the pot.

3. Stir in 2 tablespoons of low-sodium soy sauce, 2 tablespoons of rice vinegar, and 1 to 2 tablespoons of red chilli paste, adjusting the amount to your desired level of spiciness.

4. Optionally, add 1 tablespoon of fish sauce and 1 teaspoon of brown sugar for extra flavour. Adjust salt and pepper to taste.

5. Bring the broth mixture to a boil, then reduce the heat and let it simmer for about 1- to 15 minutes to allow the flavours to meld.

 

Prepare the Soup Ingredients

1. While the broth simmers, thinly slice 12 ounces of boneless beef sirloin or flank steak.

2. Cook 8 ounces of rice noodles according to the package instructions, then drain and set them aside.

3. Prepare 1 cup of sliced mushrooms (shiitake or cremini), 1 cup of chopped baby bok choy, and 1 thinly sliced red capsicum.

4. Chop 2 green onions and set them aside for garnish.

5. Optionally, prepare fresh coriander leaves for garnish and lime wedges for serving.

 

Assemble and Serve

1. Once the broth is ready, add the sliced beef to the pot and cook for about 2 to 3 minutes until the beef is just cooked through.

2. Divide the cooked rice noodles among serving bowls.

3. Ladle the hot and spicy beef broth over the noodles.

4. Add the sliced mushrooms, chopped bok choy, red capsicum, and green onions to each bowl.

5. Optionally, garnish with fresh coriander leaves and serve with lime wedges for an extra bust of flavour.
